Keep in mind the Dev team is very small and juggling support for multiple OSs is not as trivial as you make it out to be. Mac gaming is an extremely niche target audience (~1.8% of all Steam users), and the overall Mac share compared to Windows and Linux (which runs the game thanks to Proton) is not really rising. So that additional Dev time and effort is better placed somewhere else in my opinion, especially now during the crucial Early Access period.
